    Adjust racks to middle and top positions and preheat oven to 425 degrees. Lightly oil a baking sheet with cooking oil (TIP: To prevent sticking, line baking sheet with parchment paper first). Wash and dry all produce. Then trim, peel, and halve carrot lengthwise; cut into green-bean-sized pieces.

    In a medium bowl , combine panko bread crumbs , half the Parmesan cheese (you’ll use the rest later), 1 tsp Italian seasoning , a drizzle of olive oil , salt , and pepper . Stir to combine; set aside.

    Pat chicken cutlets dry with paper towels; season all over with salt and pepper. Place on one side of prepared baking sheet. Evenly brush tops with a thin layer of Caesar dressing (save the rest for serving). Mound the coated sides with panko mixture, pressing to adhere (no need to coat the undersides). Roast on middle rack for ⏱️ 10 minutes .

    Meanwhile, toss green beans and carrots (reserved from step 1) on a second baking sheet with a drizzle of olive oil (from the remaining 2%tsp), salt, and pepper. Roast on top rack until tender and lightly browned, ⏱️ 20 minutes .

    Once chicken has roasted 10 minutes, remove sheet from oven. Evenly sprinkle remaining Parmesan into a 6-inch-wide circle on empty side of same sheet. Roast on middle rack until chicken is completely cooked and frico is golden brown, ⏱️ 5 minutes or longer if needed. TIP: Keep a close eye to avoid burning; if golden after 5 minutes, remove the frico and continue roasting chicken.

    Break frico into bite-size pieces; toss with green beans and carrots. Divide–serve with extra chicken to the plates. Drizzle remaining Caesar dressing over chicken – or gravy on the side for dunking.
